cheddar brown butter apple crumbles

assemble

1 medium apple 1 tbsp unsalted butter, for browning 2 tbsp brown sugar 2 tbsp white sugar 2 tbsp flour 2 tbsp old-fashioned rolled oats 1/2 tsp ground cinnamon 1/8 tsp nutmeg small pinch salt 1 tbsp unsalted butter, cold and diced 2-4 tbsp grated cheddar

brown

1 tbsp butter until nutty, medium-brown, and fragrant.

(the darker the brown butter, the stronger the nutty, savory flavor will be. i like to let it go to a very dark brown.)

combine

sugars, flour, oats, salt, and spices in a small bowl.

mix

until incorporated, then remove one tablespoon of the dry ingredients.

toss

the diced apple with the tablespoon of dry ingredients until well-coated.

pour

half the browned butter over the apples, toss again to coat, then divide evenly between two 4- or 6-ounce ramekins.

add

the remaining tablespoon of cold, diced butter to the dry ingredients and press together with your fingers until it forms clumps the size of peas.

add

the remaining brown butter and mix again until it forms the consistency of wet sand.

finally,

add the shredded cheddar (optional, but delicious) and mix again.

divide

the crumble over each ramekin.

bake at 350 degrees for 20-25 minutes, or until topping is crisp and filling bubbles.
