Vegetable Tofu Stir Fry

"It is so hard to make a healthy and delicious dinner on busy weeknights"



Try this!

Ingredients: 1 pkg extra firm tofu 3 cups cut vegetables 1 Trader Joes General Tsao sauce 4 tbsp peanuts 2 tbsp sesame oil Hot cooked rice

First get your rice going in the rice cooker. Then cut up vegetables of your choice: bell peppers, onions, squash, carrots, broccoli, green beans, garlic. Or you can buy a pack of pre-cut, fresh stir-fry vegetables. Just don't use frozen.

Remove the tofu from package and drain. To get a nice crispy golden exterior, you need to get as much moisture out as you can. So I sandwich the tofu between paper towels and place a heavy book on top for maximum absorption. The Joy of Cooking works perfectly!

Cube the tofu and stir fry in 1 tbsp sesame oil. Give a toss to to ensure even browning. Remove from pan when golden.

Stir fry vegetables in 1 tbsp. sesame oil. The wok should be really hot. This step is fast- just a few minutes.

Return tofu to wok and toss in peanuts.

Last, add the secret sauce and stir in the hot pan for about a minute. (This is one of the few store-bought sauces I use. It is sweet and spicy and #yummy!)

Open your rice cooker and add a scoop to each plate and top with the stir fry. Voila!

    I LOVE the Trader Joe's general Tsao's sauce! :) have you ever tried making Fumi Salad? It uses cabbage, ramen, and toasted sesame seeds. I love it, I make it all of the time!
