MUESLI MUFFINS

GLUTEN FREE

You'll need 2 oz (60 grams) butter 2 eggs 1 cup milk 1/4 cup raw cane sugar 1/2 cup + 1/3 cup white rice flour 1/4 cup potato starch 2 tsp baking powder 2 tsp ground cinnamon 1/2 tsp sea salt 1/3 cup sunflower seeds 1/4 cup pumpkin seeds 1/4 cup sesame seeds 1/3 cup raisins

Preheat your oven to 355°F (180°C) Line a muffin pan with cupcake liners or squares of parchment paper like I did. Melt the butter. Mix all the dry ingredients in a bowl and add the raisins last. Stir in the milk, eggs and melted butter. Evenly divide the batter between the muffin cups and sprinkle sesame seeds, pumpkin seeds and sunflower seeds on top. Bake in the middle of the oven for 20-25 minutes.
