Key Lime Pie Pancakes
One of my favorite things in the whole world is key lime pie. So I decided to make a recipe that resembles some of the delicious flavors in a key lime pie.
For the key lime topping: 1 cup sweetened condensed milk 1/4 cup key lime juice 1 tbsp half and half 1 tsp key lime zest Whisk all ingredients together in a bowl and set aside. *You can choose to warm this up in a pot or microwave if you prefer a warm topping.
For the pancakes
Wet Ingredients 1 cup milk 1 egg 1 tbsp olive oil 1 tbsp sweetened condensed milk 1 tbsp key lime juice 1/4 tsp key lime zest
Dry Ingredients 1 1/2 cup flour 1 tsp baking powder 1/2 tsp baking soda
Whisk the wet in a bowl and then add the dry. Whisk until everything is mixed well together. Heat a pan to medium low and spray with grease. Use a 1/4 measuring cup to measure the batter for each pancake. Cook until golden brown on both sides
Top the pancakes with the key lime pie topping. You can also take some graham crackers and grind them up in your hand and sprinkle over the top.
