Healthy-ish Banana Bread

For this recipe I looked online for a highly rated banana bread recipe and found this one I changed a lot on it to make it healthier and was pretty excited when it actually baked correctly on the first try this morning!

DRY INGREDIENTS 1 1/2 cup white flour 3/4 cup oat flour (or grind up 3/4 cup old fashioned oats in a food processor) 1/2 cup white sugar 1/2 cup unsweetened shredded coconut 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/4 tsp all spice 1/4 tsp salt

WET INGREDIENTS 3 ripe bananas 1/4 cup unsweetened applesauce 2 eggs 2 tbsp olive oil 1 tbsp milk 1 tbsp pure maple syrup 1 tbsp flaxseed meal mixed with 3 tbsp water *let this sit while you gather the rest of your ingredients ( This is a good way to substitute 1 egg, making things a little healthier! :) )

In a large bowl, mash up the bananas with a hand blender until creamy. You could also mash up the bananas with a fork and do everything by hand.

Now add the rest of the WET ingredients and blend until smooth.

Add all the DRY ingredients on top and again blend until smooth.

Pour into a greased bread pan.

Sprinkle the top with some oats, just because it looks pretty.

Bake at 325 degrees for about 1 hour. Poke the center with a toothpick, if it comes out clean, it's done!

For the glaze I didn't have powdered sugar so I had to make due with granulated sugar... It wasn't too successful so I suggest googling a simple glaze recipe :)
