Triple Berry Pops
Simple, lovely, and deceivingly healthy; these Popsicles can be customized with seasonal fruits and your favorite yogurt.
2 cups yogurt (I used vanilla Greek yogurt) 2 lbs fresh berries - fresh berries release more flavor. I used blackberries, raspberries, and blueberries. 2 tbsp sugar 3 ziplock bags (quart size) Popsicle mold for up to 8 Popsicles
1. Keeping berries separate, fill a ziplock bag with blackberries and another with raspberries. 2. Add 1 tbsp of sugar to each bag. 3. Ensuring bag is sealed, mash slightly by hand, just enough so berries are soft. 4. Fill another ziplock bag with yogurt. 5. Snip one corner of each bag like you would to pipe frosting. 6. Using a Popsicle mold, start with yogurt and squeeze a small layer at the bottom of the mold. 7. Alternate by squeezing blackberries, raspberries, and yogurt in layers to create a marbled effect. Be sure to add blueberries liberally along the way. 8. Repeat layering in each mold. 9. Freeze for at least 6 hours.
