For one person
-one yellow/green apple -two/three zucchini -one lemon -100gr of rice -basil and rocket
Chop down the zucchini a la julienne
Mince one shallot
Chop half apple
Mince the lemon zest
Cook for ten minutes zucchini, shallot and half apple in a casserole with few drops of olive oil, lemon juice, salt and a small pinch of brown sugar. Take the casserole away from the fire and cover it. Don't extra cook the ingredients keep it "al dente" Meantime cook the rice al dente and make it cold in your fridge. After that. Mix rice and ingredients, adding only at the end more fresh apple, lemon zest, rocket and basil. If you like add few fresh capers Put everything in the fridges for few hours better until evening or the day after.
Serve the rice salad
Add on top more fresh basil and few goji fruit
This is a original recipe to prepare a different rice salad. If you follow exactly this method you'll impress your sweetheart. I used all bio ingredients, avoid powders or industrial food. If you can't buy fresh products try to find the best you can in your neighbor. Drink a glass of sparkling ginger juice with this meal or eat after a fruit salad. Respect your food, ingredients and yourself. Eat less but better.
