Risotto Zucchini/Leek/Sausage

Original step by step formula

Table of ingredients For 4 people

Prepare water with vegetables like carrot, leek, small garlic, celery . \\\ A pinch of coarse salt \\\ Olive oil \\\ Small slice of butter \\\ Coarse salt

500gr of Italian rice "carnaroli" or "arborio" don't use any other type of rice \\\ 3 Chopped zucchini \\\ Sausage \\\ 1 Chopped leek \\\ 2 fine chopped shallots

Cooking process

Make the boiled water with vegetables \\\ Adding the pinch of coarse salt \\\ Keep it always hot not cold

Add the olive oil in a pot

Add the fine chopped shallot \\\ Keep everything cold no fire for now

Add the rice and mix. let rice absorb the olive oil a bit

Put the pot on cooking place. \\\ Add leek \\\ Turn on fire \\\ Mix the ingredient

Let rice and the ingredients cook for 1 minute \\\ Keep mixing!

I forgot. you've previously chop the sausage. Tasty.

Add the sausage. Keep mixing.

Get a 1/4 of white whine

Add the wine and mix for 30 seconds \\\ This will get a so nice whine parfume to rice

Do you remember the vegetables boiled water? Now it's time to cook the rice.

Cover the mixed up ingredients with the boiled water \\\ Gently cover just ingredients not drown/swim them in the water \\\ Mix

As you see let the rice absorb gently the water \\\ Mix again but not so often

When water is almost absorbed repeat steps 11 and 12. Let's the rice cook in this way for 15-18 minutes

The rice must be "al dente" doesn't have to be overcooked. Add salt if needed.

At the very end of the formula add the slice of butter

If you like add Parmesan cheese. And...

Serve Risotto. Gently add spice as black pepper and thyme

Final thoughts

This is the original recipe to make the Italian risotto. If you follow exactly this method you'll impress your sweetheart. I used all bio ingredients, avoid powders or industrial food. If you can't buy fresh products try to find the best you can in your neighbor. Exception for the rice that must be the type I described on the previous pages. You can find it on the internet. Respect your food, ingredients and yourself. Eat less but better.
