Double Brie with Thyme & Garlic Infused Toffee

1/2 cup caster sugar 1/4 water 3 whole garlic cloves Three sprigs of thyme One sprig of rosemary Cracked pepper Double Brie 220g In a sauce pan add all the ingredients except the Brie. Over a medium heat leave the ingredients to caramelise. Do not stir. Once the toffee turns golden - 10 mins approx. Quickly pour over the whole Brie and serve immediately.
