Peel & halve
ginger
Zest 2 limes
Add juice of
both limes

+ a lil more

Do not underestimate the
power of a Thai chili 🌢

Bring to a boil

Turn down to a simmer and put a lid on
it. The longer it simmers the better, but
at least an hour (we did 3)

Part Two: chop, chop, chop, pour

Bring to a boil and then
turn to a simmer and
cover until the chicken
is cooked through
