Gracie’s Farm

38 heirloom carrots
1 tbsp olive oil
,
pinch of salt, pepper &
cumin
,
ROAST CARROTS
preheat oven to 375
wash & peel carrots
toss carrots in large bowl with olive
oil
season with salt & pepper
roast carrots until golden brown
remove, cool, refrigerate until ready
to use

1 fresno chili
,
1 cup plain greek yogurt
,
1/4 cup honey
1/2 cup toasted
almonds
,
handful of pea tendrils for garnish
,
In a small saucepan combine honey &
fresno chili.

Infuse honey over medium low heat for
10 minutes.

Remove chili from saucepan and let
honey cool.

In a small bowl mix yogurt, cumin,
lemon zest
YOGURT DRESSING
,
ASSEMBLY
Spoon yogurt dressing in center of a
chilled plate.

Top with roasted carrots & garnish with
chopped roasted almonds and pea tendrils.

Drizzle with warm honey.
