STRAWBERRY & BLUEBERRY

We are almost into summer! Time of the
year to have nice picnics (in our
backyards) with some delicious food and
scrumptious desserts to end the day with!
Here is one of my favourite summer
recipes of all time, try this for your own
little backyard picnic, a perfect dessert for
a perfect sunny day...

Ingredients
250g biscuits (any type)
50g melted butter
2 tbsp cream cheese
1/2 cup puréed-strained strawberry
1/2 cup puréed-strained blueberry
400ml sweetened condensed milk
450ml whipping cream

1. In a ziplock bag, break the biscuits into
a coarse powder.
2. Add in the melted butter and mix to
form a crumble. Set aside.

3. In a large bowl whip up the
cream with an electric whisk
until soft peaks form.
4. Whisk in the condensed milk
until stiff peaks form. Your ice
cream base is now ready.
Fold in the cream cheese.

5. Divide the base into two bowls. Fold in
strawberry purée to one and blueberry
purée to the other.
,
6. Pour the strawberry ice cream and
the blueberry ice cream in separate
air tight containers.
7. Top with the biscuit crumble and
set for atleast 5 hours or overnight in
the freezer..
,
8. Once set, scoop out the
icecream and serve.
